1. Make the dough: Pour the flour onto a clean countertop or large board. Make a well in the center and crack the egg into it. Add a pinch of salt. Using a fork, gradually incorporate the flour from the edges into the egg until a dough starts to form. 2. Knead: Once the mixture becomes difficult to stir, begin kneading with your hands. Knead for 7–8 minutes, or until the dough is smooth and elastic. If the dough is too dry, wet your hands slightly; if it’s too sticky, sprinkle on a little more flour. 3. Rest: Wrap the dough in plastic wrap or cover with a bowl. Let it rest at room temperature for at least 30 minutes. 4. Roll it out: Using a pasta machine or rolling pin, roll the dough to your desired thickness. Start from the thickest setting and work your way down if using a machine. 5. Shape the pasta: Cut the dough into your preferred shape: tagliatelle, fettuccine, pappardelle, ravioli—whatever you like!View original recipe
